Tips & Hints: Tips for using cake pans
There are a few special considerations to take into account when using your cake pans. The following is a helpful check list that you can use when selecting and baking with cake pans:
1. Use cake pans that are the correct size for the recipe: if the pan is too big the cake will come out flat and dry, and if it’s too small the cake will bulge and run down over the sides.
2. The best cake pans are make from shiny aluminum or gray, non-stick metals which reflect heat away from the cake, resulting in a moist interior and a light, crisp crust.
3. Only fill cake pans half way so that the cake has room to rise; this may be difficult to judge with odd shaped pans such as Bundt Cake Pans, so measure first with water to determine the half way point.
4. To prevent the cake from sticking to the pan the bottom should be well greased or sprayed with cooking spray.
