Bibeleskas refers to an Alsacian specialty, an appetizer which is made with a soft white cheese called "fromage blanc" and with chopped bacon, potatoes, chives, parsley, garlic, a bit of oil, and salt and pepper to taste. Bibeleskas is often eaten with bread. Alsace is a province and region of north eastern France centred around Strasbourg, along the Rhine, bordering Germany.
