Wiener Masse is the German term for Biskuitteig, a sponge mixture. Biskuitteig is also known as Rürhteig.
Sponge mixture is used mainly for cakes, sponge cakes, cake rolls and creamy pies. Its creamy-airy consistency is great with fresh fruit and sweetcream pie.
