Matelote refers to French fish stew made with red or white wine, and often cooked only with freshwater fish. However, Matelote is already made throughout France in several variations, depending on local tastes and available seasonal foods.

Maxixe refers to a Brazilian vegetable that resembles a cucumber which covered with thorny warts.

Mechoui refers to a Moroccan specialty food. A spit-roasted whole lamb or sheep rubbed with a paste of paprika and cumin, ground coriander seeds and garlic cloves over the lamb which is then slowly cook or roasted for about three (3) hours. This dish is usually eaten with the fingers while still hot and are dipped into a salt and cumin mixture and mostly eaten with a Moroccan bread.

Mile High Pie refers to an American pie, specifically from New Orleans. It is a dessert pie with a cookie crust layered with several flavors of ice cream crowned or topped with meringue.

Mimosa refers to a drink made with champagne and orange juice. Mimosa is called in the United Kingdom as Bucks Fizz.

Mock Duck refers to a fresh, organic wheat gluten that is folded and pressed creating a meat substitute to duck in Buddhist and other vegetarian dishes. Mock Duck is available canned in Asian markets.
