Pho Chay refers to vegetarian Pho or a meatless Vietnamese soup or noodle dish.
Pho is the well-known Vietnamese rice noodle dish. The authentic version has its broth made using beef or chicken bones, then served together with various kinds of beef or chicken meats. The noodle dish is essentially a meat-based dish. In the words of Asian cookbook author Corinne Trang, pho is really two separate dishes in one: the broth, and the noodle with its ingredients. It would take good skills and experience to create imitation pho, which is exactly what vegetarian pho is.
A real and completely vegetarian pho is made entirely from vegetables. Instead of using meats and bones, the broth depends entirely on vegetable ingredients such as leeks, wheat gluten (mock beef, chicken, etc.,) tofu and mushrooms for flavors and textures. Important pho ingredients are definitely retained to keep the pho flavors, and as long as they are not meat-based. These include onion, star anise, cinnamon, ginger, cloves, and the likes. Vegan or not, pho would not be pho without these ingredients to give pho its unique aroma.
Punjena Paprika refers to a Croatian dish made of peppers, stuffed with a mix of meat and rice in tomato sauce. Punjena ingredients include of green or red capsicums, eggs, spices, salt, tomato, minced meat and rice.
Punjena Paprika or stuffed paprika is also a Balkan food and is called in varieties of names in different countries in the Balkans, namely:
Punjena Paprika in Serbia, Bosnia, Croatia and Montenegro;.
Polneti Piperki in Macedonia;.
Pulnena Paprika or Pulneni Chushki in Bulgaria;.
Ardei Umpluti in Romania.
It is a famous Balkan dish consisting of paprikas/peppers basically filled with mixture of meat and rice, however, there are already many variations of stuffed peppers across Balkan countries depending on each preference. Punjena Paprika is serve warm or cold.
Poulet à l'Indienne refers to a chicken curry from Comoros. Poulet à l'Indienne is a traditional and Comorian dish inspired by the classic Indian curry of chicken in a spiced tomato and yogurt sauce.
Comoros is an island nation in the Indian Ocean, located off the eastern coast of Africa on the northern end of the Mozambique Channel between northern Madagascar and northeastern Mozambique. Comorian is a Bantu language that looks like, but is not related to, Swahili; each island has its own way of speaking it. The language contains many words of Arabic and French origin. All Comorians receive a Koranic education and learn to write their language in Arabic characters. Formal education is given in French, hence many of its traditional food has a French name.

Pounded Yam refers to a smooth dough of mashed yam which is usually eaten with vegetable soup or stew. Pounded Yam is much like mashed potatoes, but smoother, heavier and tastier. It is a very popular African food, especially in Nigeria, Ghana, the Ivory Coast, Benin and other parts of West Africa. Pounded Yam is purchased as a powder before being mixed with water to make a dough.
Pounded Yam is sometimes called Pounded Iyan, the Yoruba word for Pounded Yam.
