Dovga

Dovga refers to Azerbaidjan's "yoghurt soup". Dovga is thick spicy soup made from rice, spices, sour milk or yoghurt, spinach, fennel and eggs. Sometimes meat is added to it, but it can be prepared with or without meat.. This yogurt-based soup may be served chilled or at room temperature. It consists of yogurt mixed with cucumber, dill, green onion and a bit of rice. It may also include a variety of herbs, including coriander, mint and chives depending on the region. Eggs, chickpeas or beans may be added. Dovga is also known or called as Dovgha.
